Peel and dice 2 medium-sized apples. In a bowl, mix the diced apples with 1/4 cup of granulated sugar and 1 teaspoon of ground cinnamon. Set the mixture aside.
Preheat your oven to 375°F (190°C). Unroll a can of refrigerated crescent roll dough onto a flat surface, and separate the triangles. Place a spoonful of the apple-cinnamon mixture on the wider end of each triangle. Carefully roll up the triangles, starting from the wider end and tucking in the sides as you go. Place the rolled croissant rolls on a baking sheet lined with parchment paper.
Place the baking sheet with the croissant rolls in the preheated oven. Bake for approximately 12-15 minutes, or until the rolls turn golden brown and flaky. Keep an eye on them to prevent over-browning. Once done, remove the rolls from the oven and let them cool for a few minutes before serving.
