In a large mixing bowl, combine 2 ¼ cups of all-purpose flour, 2 tablespoons of granulated sugar, 1 packet of instant yeast, and a pinch of salt. In a separate microwave-safe bowl, heat ¾ cup of milk and 2 tablespoons of unsalted butter until warm but not hot. Stir the milk mixture into the dry ingredients until a dough forms.
Flour a clean surface and transfer the dough onto it. Knead the dough for about 5-7 minutes, or until it becomes smooth and elastic. If the dough feels too sticky, add a little extra flour.
Grease a large bowl with oil and place the dough inside. Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for about 1 hour, or until it doubles in size.
Once the dough has risen, punch it down to release the air. Roll the dough out on a lightly floured surface into a rectangle about ¼ inch thick. Brush the surface with 2 tablespoons of melted butter and sprinkle with a mixture of ¾ cup of brown sugar and 2 tablespoons of ground cinnamon.
Starting from the long edge, tightly roll up the dough into a log and pinch the seam to seal. Cut the log into 12 equal slices using a sharp knife or dental floss. Place the slices in a greased baking dish, leaving some space in between for rising.
Cover the baking dish with plastic wrap and let the rolls rise for another 30 minutes. Preheat your oven to 350°F (175°C). Bake the cinnamon rolls for 20-25 minutes, or until golden brown and fragrant. Remove from the oven and let them cool for a few minutes before indulging.
