Prepare the dough

In a mixing bowl, combine 2 1/4 cups of all-purpose flour, 2 tablespoons of granulated sugar, 1 teaspoon of instant yeast, and a pinch of salt. Mix well. Slowly pour in 3/4 cup of warm milk and 2 tablespoons of melted butter. Stir the mixture until a sticky dough forms.

Knead the dough

Transfer the sticky dough to a lightly floured surface. Knead the dough for about 5 minutes, until it becomes smooth and elastic. If the dough feels too sticky, add a little more flour. Place the dough back into the mixing bowl and cover it with a kitchen towel. Let it rise in a warm place for 1 hour, or until it doubles in size.

Prepare the filling

In a small bowl, mix together 1/2 cup of brown sugar, 1 tablespoon of ground cinnamon, and a pinch of nutmeg. Set aside.

Roll out the dough

After the dough has risen, transfer it to a lightly floured surface. Roll it out into a rectangle about 1/4 inch thick.

Spread the filling

Spread 2 tablespoons of softened butter evenly over the rolled-out dough. Sprinkle the prepared filling mixture on top.

Roll and slice

Starting from one of the long sides, tightly roll the dough into a log. Use a sharp knife to slice the log into about 12 equal-sized pieces.

Bake the cinnamon rolls

Line a baking sheet with a reusable silicone baking sheet. Place the sliced cinnamon rolls on the baking sheet, leaving some space between each one. Cover them loosely with a kitchen towel and let them rise for another 30 minutes. Preheat your oven to 375°F (190°C). Bake the cinnamon rolls for 15-18 minutes, or until golden brown.
