Gather all your ingredients to make sure you have everything you need. You'll need 2 cups of all-purpose flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, 1/2 cup of unsalted butter (at room temperature), 1/2 cup of granulated sugar, 1/2 cup of brown sugar (packed), 1 large egg, 1 teaspoon of vanilla extract, and a handful of gummy bears.
In a medium-sized bowl, whisk together the flour, baking soda, and salt. In a separate larger bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract to the butter mixture and mix until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can lead to tough cookies. Once the dough comes together, gently fold in the gummy bears, making sure they're evenly distributed.
Cover the dough with plastic wrap and refrigerate for at least 1 hour. Meanwhile, preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Using a small cookie scoop or a tablespoon, drop rounded balls of dough onto the prepared baking sheet. Make sure to leave space between the cookies, as they will spread while baking. Press a few extra gummy bears onto the tops of the dough balls for an extra cute touch. Bake for 10-12 minutes, or until the edges are golden brown.
