Before you embark on your baking adventure, let's make sure you have everything you need. You'll need 2 cups of grain-free granola, 3 eggs, 1/2 cup of almond flour, 1/4 cup of maple syrup, 1/4 cup of coconut oil (melted), 1 teaspoon of vanilla extract, 1/2 teaspoon of baking powder, and a pinch of salt. Preheat your oven to 350°F (175°C) as well.
In a large mixing bowl, combine the grain-free granola, almond flour, baking powder, and salt. Give it a good stir to ensure all the dry ingredients are well mixed. In a separate bowl, beat the eggs and add in the melted coconut oil, maple syrup, and vanilla extract. Whisk until everything is nicely combined.
Now, it's time to bring the wet and dry ingredients together. Pour the wet mixture into the bowl with the dry ingredients. Stir gently until everything is evenly combined. Avoid overmixing, as it may result in dense muffins. A few lumps are perfectly fine!
Line a muffin tin with paper liners or grease it with a bit of coconut oil to prevent sticking. Fill each muffin cup about 3/4 full with the batter. This should yield approximately 10-12 muffins, depending on the size of your muffin tin.
Pop your muffin tin into the preheated oven and bake for approximately 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Once baked, remove the muffins from the oven and let them cool for a few minutes before transferring them to a wire rack to cool completely. Now, it's time to enjoy your homemade Grain-Free Granola muffins!
