To kickstart this biscotti bonanza, preheat your oven to 350°F (175°C). It's time to heat things up!
In a mixing bowl, combine 2 cups of all-purpose flour, 1 cup of sugar, 1 teaspoon of baking powder, and a pinch of salt. Give it a good mix to make sure everything is well blended.
Zest two grapefruits and add the zest to the dry ingredients. Squeeze the juice of one of the grapefruits into the mixture and add 1 teaspoon of vanilla extract. Mix it all together until you have a lovely dough forming.
Grab your dough and divide it into two equal parts. Roll each part into a log shape, approximately 1 inch in diameter. Place the logs on a baking sheet lined with parchment paper, making sure to leave some space between them.
Pop those grapefruit-infused logs into the preheated oven and bake them for about 25-30 minutes. You want them to turn golden brown and feel firm to the touch.
Once the logs are cool enough to handle, slice them into diagonal pieces, about 1/2 inch thick. Lay the biscotti slices flat on the baking sheet and bake them for another 10-15 minutes, turning them halfway through. This will give them that perfect crunchiness.
