Mixing the Dough

In a large bowl, mix 3 cups of all-purpose flour, 1 teaspoon of salt, and 2 teaspoons of instant yeast. Add 1 cup of warm water and 2 tablespoons of olive oil to the dry ingredients. Mix everything together until it forms a shaggy dough.

Kneading and Rising

Transfer the dough onto a floured surface and knead for about 10 minutes, until the dough becomes smooth and elastic. Form it into a ball, then place it in a greased bowl. Cover the bowl with a towel and let the dough rise in a warm spot for about 1 hour, or until it doubles in size.

Shaping the Pitas

Once the dough has risen, punch it down to release any air pockets. Divide the dough into 8 equal pieces and shape each piece into a ball. On a floured surface, roll out each ball into a circle, about 7-8 inches in diameter.

Baking Time!

Preheat your oven to 500°F (260°C). If you have a baking stone or a baking sheet, place it in the oven during preheating. Carefully transfer the rolled-out pitas onto the preheated baking surface. Bake for 4-5 minutes, or until they puff up and turn golden brown.
