In a pan, heat 1 tablespoon of oil over medium heat. Add 1 finely chopped onion and sauté until it turns golden brown. Then, add 1 cup of boiled and mashed potatoes, 1/2 cup of green peas, 1/2 teaspoon of cumin powder, 1/2 teaspoon of coriander powder, 1/4 teaspoon of red chili powder, and salt to taste. Mix everything well and cook for 2-3 minutes.
Preheat your oven to 375°F (190°C). Take a sheet of puff pastry and cut it into small squares. Place a spoonful of the prepared filling in the center of each square. Fold the squares in half diagonally to form triangles and seal the edges by pressing them together. Repeat with the remaining pastry squares and filling.
Place the samosa bites on a baking tray lined with parchment paper. Brush the tops with beaten egg to give them a nice golden color. Bake in the preheated oven for 15-20 minutes, or until the samosa bites turn golden brown and crispy.
