Bake up a delicious surprise with our Spinach and Feta Stuffed Tomatoes recipe! Perfect for a light and flavorful appetizer or side dish.
Take note
Be careful not to overstuff the tomatoes, or they may burst in the oven. Also, be mindful of the hot oven when removing the dish.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or aluminum foil. Cut the top off each tomato and gently scoop out the seeds and pulp with a spoon. Set the hollowed-out tomatoes aside on the prepared baking sheet.
In a mixing bowl, combine 1 cup of chopped spinach, 1/2 cup of crumbled feta cheese, 1/4 cup of bread crumbs, 1 clove of minced garlic, and salt and pepper to taste. Mix everything until well combined.
Take spoonfuls of the filling mixture and gently stuff each tomato until they are filled but not overflowing. Place the stuffed tomatoes back on the baking sheet.
Bake the stuffed tomatoes in the preheated oven for about 20-25 minutes or until the tomatoes are slightly softened and the filling is golden on top. Once done, remove from the oven and let them cool for a few minutes. Serve them warm and watch your friends and family enjoy this delightful treat!
