Remember not to double-dip your chips and make sure your oven is preheated. Also, be careful not to burn yourself when removing the dish from the oven.
Collect 10 ounces of frozen spinach, 1 can of artichoke hearts, 1 cup of Greek yogurt, 1/2 cup of shredded Parmesan cheese, 1/3 cup of mayonnaise, 1/4 cup of grated mozzarella cheese, 2 cloves of minced garlic, 1 teaspoon of lemon juice, and a pinch of salt and pepper.
Preheat your oven to 375°F (190°C) so it's nice and toasty when you're ready to bake.
Thaw the frozen spinach and drain it well by squeezing out any excess water. Drain the can of artichoke hearts and chop them into smaller pieces.
In a large bowl, combine the Greek yogurt, shredded Parmesan cheese, mayonnaise, minced garlic, lemon juice, salt, and pepper. Stir in the spinach and artichoke hearts until well combined.
Spread the mixture evenly into a baking dish. Sprinkle the grated mozzarella cheese on top.
Pop the baking dish into the preheated oven and bake for about 20-25 minutes, or until the top is golden and bubbly. Serve it up with some whole grain crackers or veggie sticks and enjoy!
