Handle with care when handling the puff pastry - it can be delicate and tear easily.
In a mixing bowl, combine 2 cups of chopped spinach, 1 cup of shredded cheese, and 1/4 cup of grated Parmesan cheese. Mix everything together until well combined.
Unroll a sheet of thawed puff pastry onto a lightly floured surface. Spread the spinach and cheese filling evenly over the pastry, leaving a small border around the edges. Roll up the pastry tightly, starting from one of the shorter sides.
Place the rolled-up pastry in the refrigerator for about 20 minutes to firm up. Once chilled, remove it from the fridge and slice it into 1/2-inch thick rounds. Place the pinwheels on a baking tray lined with parchment paper.
Preheat your oven to 400°F (200°C). Bake the pinwheels for 15-18 minutes, or until they are golden brown and puffed up. Keep an eye on them as they can quickly go from golden to burnt!
Once out of the oven, let the pinwheels cool slightly before serving. They can be enjoyed warm or at room temperature. Arrange them on a platter and watch them disappear!
