Start by wilting a bunch of fresh spinach in a skillet. Once it's wilted, squeeze out any excess moisture and chop it up. In a bowl, mix the spinach with some grated cheese, such as mozzarella or cheddar. Add a pinch of salt and pepper to taste.
Next, roll out a sheet of puff pastry on a lightly floured surface. You want it to be thin, but not too thin! Spread the spinach and cheese filling evenly over the pastry, leaving a small border around the edges.
Now comes the fun part. Starting from one end, tightly roll the pastry into a log, enclosing the filling. Once rolled, pinch the seam together to seal it. If any filling tries to escape, just tuck it back in.
Using a sharp knife, slice the log into individual pinwheels, about 1/2 to 3/4 inch thick. Place the pinwheels on a baking sheet lined with parchment paper. Put them in a preheated oven at 400°F (200°C) and bake for around 15-20 minutes, or until golden and crispy.
