In a mixing bowl, combine 1 cup of shredded cheese (cheddar or mozzarella work great) with 1 cup of finely chopped fresh spinach. Mix well to ensure the spinach is evenly distributed throughout the cheese.
Unroll a can of crescent roll dough and separate the triangles. Place a spoonful of the cheesy spinach filling onto the wide end of each triangle. Carefully roll up the dough, tucking in the sides as you go, and place the croissants on a baking sheet lined with parchment paper.
Pop the baking sheet into the preheated oven and bake for 12-15 minutes, or until the croissants are golden brown and the cheese is melted and bubbly.
