Wash and dry 2 medium-sized zucchinis. Trim off the ends and cut the zucchinis into long, thin strips, resembling the shape of fries.
In a bowl, combine 1/2 cup of breadcrumbs, 1/4 cup of grated Parmesan cheese, 1 teaspoon of garlic powder, 1/2 teaspoon of smoked paprika, and a pinch of salt and pepper. Mix well and set aside.
Dip each zucchini strip into 2 beaten eggs, then roll it in the breadcrumb mixture until evenly coated. Place the coated zucchini strips on a baking sheet lined with parchment paper.
Preheat your oven to 425°F (220°C). Bake the zucchini fries for 20-25 minutes, or until they are golden brown and crispy. Flip them halfway through cooking to ensure even browning.
Once the zucchini fries are nicely golden and crispy, remove them from the oven and let them cool slightly. Serve them as a tasty appetizer or a side dish alongside your favorite dipping sauce. Enjoy the explosion of flavors!
