Preheat your oven to 425°F (220°C). Wash and dry 2 medium zucchinis. Cut off the ends and slice them lengthwise into thin, fry-like sticks.
In a bowl, mix together 1 cup of breadcrumbs, ½ cup of grated Parmesan cheese, 1 teaspoon of garlic powder, and a pinch of salt. Set this glorious mixture aside.
Take your zucchini sticks and dip them generously into 2 beaten eggs. Once they're nice and eggy, roll them in the breadcrumb mixture, making sure each fry is evenly coated.
Line a baking sheet with parchment paper and place the coated zucchini fries on it. Bake in the preheated oven for about 15-20 minutes, or until they turn golden brown and crispy.
Once your zucchini fries are beautifully crisp, remove them from the oven and let them cool for a minute. Serve them with your favorite dipping sauce and savor the guilt-free goodness!
