In a large skillet, heat 1 tablespoon of oil and sauté 1 chopped onion until golden brown. Add 1 teaspoon of minced garlic, 1 teaspoon of grated ginger, and your choice of vegetables like peas, carrots, or potatoes. Cook for a few minutes until the vegetables are tender. Season with salt, pepper, and your favorite spices like turmeric, cumin, or garam masala. Set aside and let the filling cool.
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Take a sheet of phyllo pastry and cut it into strips. Brush a strip with melted butter or oil, place a spoonful of the filling at one end, and fold it into a triangle. Continue folding until you reach the end of the strip. Repeat with the remaining strips and filling.
Line a baking sheet with parchment paper and place the samosas on it. Brush the tops with melted butter or oil for a golden crust. Bake in the preheated oven for about 15-20 minutes, or until the samosas turn crispy and golden brown. Keep an eye on them to avoid overbaking.
Take the baked samosas out of the oven and let them cool slightly. Serve them with your favorite chutney or dipping sauce. Feel the satisfaction as you indulge in guilt-free snacking!
