Take note
Remember to handle hot items with care and exercise caution when using sharp kitchen tools.
Preheat your oven to 400°F (200°C). In the meantime, rinse the fish fillets under cold water and pat them dry with a paper towel. Season both sides of the fillets with salt, pepper, and a squeeze of lemon juice for a burst of brightness.
In a mixing bowl, combine flour, cornstarch, baking powder, salt, and your choice of spices (such as paprika or garlic powder) for additional flavor. Gradually whisk in cold water until you achieve a smooth batter. Dip each seasoned fish fillet into the batter, coating it thoroughly.
Place the coated fish fillets on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes or until the fish is beautifully golden brown and crispy. Flip the fish halfway through cooking to ensure even browning.
While the fish is baking, it's time to tackle the chips! Peel and cut potatoes into thick fries or wedges. Place the potato pieces in a large bowl of cold water for about 15 minutes to remove excess starch. Drain the potatoes and pat them dry with a kitchen towel. Toss the potato pieces with olive oil, salt, and your favorite seasoning. Spread them out in a single layer on a baking sheet lined with parchment paper.
Pop the baking sheet with the potato pieces into the oven alongside the fish. Bake for about 25-30 minutes or until the chips are crisp and golden brown. Remember to give them a gentle toss halfway through baking to ensure even cooking.
While everything is baking to perfection, it's time to whip up the star of the show - the Tartar Sauce! In a bowl, combine mayonnaise, chopped pickles, capers, lemon juice, Dijon mustard, chopped fresh dill, and a pinch of salt and pepper. Mix it all together until well combined. Feel free to adjust the ingredients to suit your taste.
Once the fish and chips are beautifully cooked, remove them from the oven. Serve them hot on a plate, alongside a generous dollop of your homemade Tartar Sauce. Garnish with fresh lemon wedges and a sprinkle of chopped parsley for that extra touch of pizzazz. Grab your fork and dig in!
