In a mixing bowl, combine 2 cups of all-purpose flour, 1/2 cup of sugar, 2 teaspoons of baking powder, 1/2 teaspoon of salt, and 1/2 teaspoon of ground cinnamon. Mix them well until evenly combined.
Pour in 3/4 cup of almond milk, 1/4 cup of melted coconut oil, and 1 teaspoon of vanilla extract. Mix everything together until you have a smooth, slightly sticky dough.
Cover the dough with a clean kitchen towel and let it rest for about 30 minutes. This will allow the flavors to meld and the dough to become more pliable.
While your dough is taking a siesta, preheat your oven to 350°F (175°C). Grease a donut pan with a little coconut oil so your donuts don't stick.
Once the dough has rested, lightly flour a clean surface and roll it out to about 1/2-inch thickness. Use a donut cutter or a round and smaller cutter to form your donuts. Don't forget to save those donut holes!
Carefully transfer the donuts to the greased donut pan. Bake them in the preheated oven for 12-15 minutes or until they turn a golden brown color.
In a shallow bowl, mix 1/2 cup of sugar and 1 teaspoon of ground cinnamon. When the donuts are slightly cooled, dip them into the cinnamon sugar mixture to coat them evenly.
