Gather all your ingredients and preheat the oven to 400°F (200°C). It's important to have everything ready before you start baking these delightful scones.
In a mixing bowl, combine 2 cups (240g) of gluten-free flour, 1/4 cup (50g) of white sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Give it a good mix, and make sure all the dry ingredients are well combined.
Add 1/4 cup (60g) of vegan butter, cut into small pieces, to the dry mixture. Use your fingers to rub the butter into the dry ingredients until the mixture resembles coarse crumbs. This step makes the scones beautifully flaky.
In a separate bowl, whisk together 1/2 cup (120ml) of almond milk and 1 teaspoon of vanilla extract. Slowly pour the liquid mixture into the dry ingredients, stirring gently until a soft dough forms. Be careful not to overmix, as it can make the scones tough.
Transfer the dough onto a lightly floured surface. Gently knead it a couple of times until it comes together. Flatten the dough into a 1-inch (2.5cm) thick circle. Using a round cookie cutter, cut out scone shapes and place them onto a parchment-lined baking tray. Re-roll any leftover dough and repeat until it's all used up. Brush the tops of the scones with a little almond milk for a golden finish.
Pop the tray of scones into the preheated oven. Bake for approximately 15-18 minutes, or until the scones have risen and turned golden brown. Keep an eye on them, as baking times may vary depending on your oven. Once baked, remove them from the oven and let them cool slightly before transferring them to a wire rack.
