Be careful not to overmix the dough or your scones could turn out tough. Also, be sure not to open the oven door too often while baking, or your scones may not rise properly.
In a large bowl, whisk together 2 cups of all-purpose flour, 1/4 cup of granulated sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
Add 1/2 cup of cold unsalted butter, cut into small cubes, to the dry ingredients. Use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs.
Pour in 3/4 cup of cold heavy cream and 1 teaspoon of vanilla extract. Stir with a fork until the dough starts to come together.
Transfer the dough to a lightly floured surface and knead it gently a few times to bring it together.
Pat the dough into a circle about 1 inch thick. Cut out scones using a round biscuit cutter or the rim of a glass. Place the scones on a baking sheet lined with parchment paper.
Brush the tops of the scones with a little extra heavy cream to help them brown nicely in the oven.
Preheat your oven to 425°F (220°C) and bake the scones for about 12-15 minutes, or until they are golden brown on top. Let them cool for a few minutes, then serve with butter, jam, or clotted cream. Enjoy!
