Prepare the cake batter

In a mixing bowl, combine gluten-free flour, cocoa powder, baking powder, and a pinch of salt. In a separate bowl, whisk together melted coconut oil, plant-based milk, and your choice of sweetener. Gradually add the wet ingredients to the dry ingredients, stirring well until smooth and evenly combined.

Bake the cake

Pour the cake batter into a lined baking sheet and spread it out evenly. Bake in a preheated oven at 350°F (175°C) for approximately 15-20 minutes, or until a toothpick inserted into the center comes out clean. Once baked, remove the cake from the oven and let it cool completely.

Prepare the frosting

In a mixing bowl, cream together vegan butter, powdered sugar, and vanilla extract until light and fluffy. Optional: add a few drops of plant-based milk if the frosting needs to be thinned out. Set aside.

Assemble the Yule Log

Carefully roll up the cooled cake, starting from one of the short ends. Use a sharp knife to remove a slice from one end of the log, setting it aside to be used as a decorative branch. Place the rolled cake onto a serving platter or tray and spread a thin layer of frosting all over the top and sides of the log.
