To make a gluten-free Christmas Yule Log, you'll need: 6 large eggs, 1 cup of granulated sugar, 1/2 cup of cocoa powder, 1/2 cup of gluten-free all-purpose flour, 1 teaspoon of vanilla extract, 1/4 teaspoon of salt, 1/2 cup of gluten-free raspberry jam, and powdered sugar for dusting.
In a large mixing bowl, crack in your eggs and add the granulated sugar. Using an electric mixer, beat the eggs and sugar together until they become thick, pale, and fluffy. This typically takes about 5-7 minutes on medium-high speed.
Sift in the cocoa powder, gluten-free all-purpose flour, and salt into the egg mixture. Gently fold the dry ingredients into the batter using a spatula until they are fully incorporated. Be careful not to overmix so you keep the airiness in the batter.
Preheat your oven to 375°F (190°C). Line a jelly roll pan (approximately 10x15 inches) with parchment paper. Pour the batter onto the pan and smooth it out evenly. Place it in the oven and bake for 12-15 minutes, or until the cake is set and springs back when gently touched. Remove from the oven and let it cool for a few minutes.
Once the cake has cooled slightly, dust it generously with powdered sugar. Carefully flip the cake onto a clean kitchen towel or parchment paper. Gently peel off the parchment paper that was used during baking. Spread an even layer of gluten-free raspberry jam over the entire surface of the cake. Starting from one of the short ends, gently roll up the cake, using the towel or parchment paper to help you create a tight spiral.
Transfer the Yule Log onto a serving platter, seam side down. Dust the log with more powdered sugar for a snowy effect. Now the fun part begins – decorating! You can use whipped cream, fresh berries, or even mini meringue mushrooms to create a festive winter scene on top. Let your creativity run wild! Once decorated, pop the Yule Log in the refrigerator to chill for at least 1 hour before serving. Slice and enjoy the gluten-free magic!
