In a large mixing bowl, combine 1 cup of chickpea flour, 1/2 cup of nutritional yeast, 1 teaspoon of garlic powder, 1 teaspoon of paprika, 1/2 teaspoon of onion powder, and 1/2 teaspoon of salt. Mix well to combine all the dry ingredients.
Next, add 1/2 cup of vegetable broth, 2 tablespoons of soy sauce, and 1 tablespoon of olive oil to the dry ingredients. Mix everything together until you have a dough-like consistency.
Transfer the dough to a clean surface and knead it for about 5 minutes until it becomes smooth and elastic. This will help develop the gluten-like texture in the seitan.
Divide the dough into smaller portions and shape them into steak-like patties. You can make them as thick or thin as you prefer.
Heat a tablespoon of oil in a skillet over medium-high heat. Once the oil is hot, add the seitan steaks and cook for about 5 minutes on each side, or until they develop a golden-brown crust.
Remove the seitan steaks from the skillet and let them rest for a few minutes. Serve them with your favorite side dishes or use them in sandwiches and wraps. Enjoy your gluten-free seitan steak creation!
