In a mixing bowl, combine 1 cup of almond flour, 1/4 cup of coconut flour, 1/4 cup of grain-free granola (your favorite flavor), 1/2 teaspoon of baking powder, and a pinch of salt. Whisk them all together until well blended.
In a separate bowl, whisk together 3 large eggs, 1/4 cup of almond milk, 2 tablespoons of melted coconut oil, 2 tablespoons of honey (or maple syrup), and 1 teaspoon of vanilla extract. Mix until smooth and well combined.
Pour the wet ingredients into the bowl with the dry ingredients. Using a spatula, gently fold the mixture together until just combined. Be careful not to overmix; a few lumps are perfectly fine.
Preheat a non-stick griddle or skillet over medium heat. Lightly grease the surface with coconut oil or cooking spray.
Using a 1/4 cup measuring cup, scoop the batter onto the preheated griddle. Cook each pancake for about 2 minutes, or until bubbles form on the surface. Flip and cook for another 1-2 minutes, until golden brown and cooked through.
