Remember to preheat your oven and be careful when handling hot donuts. A little indulgence is always a good thing, but try not to eat the whole batch in one sitting!
In a large mixing bowl, combine 2 cups of all-purpose flour, 1/2 cup of sugar, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt. Give it a good stir with a whisk to make sure all the ingredients are evenly distributed.
In a separate bowl, whisk together 3/4 cup of almond milk, 1/3 cup of melted coconut oil, 2 teaspoons of vanilla extract, and 1/4 cup of unsweetened applesauce. Make sure everything is well combined.
Pour the wet ingredients into the bowl with the dry ingredients. Gently fold everything together until just combined. Be careful not to overmix - a few lumps are okay. The batter should be thick and smooth.
Preheat your oven to 350°F (175°C). Grease a donut pan with some coconut oil or non-stick spray. Using a spoon or a piping bag, carefully fill each donut cavity about 3/4 of the way full with the batter. Smooth out the tops with the back of the spoon, if needed.
Bake the donuts in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center comes out clean. Remove them from the oven and let them cool in the pan for a few minutes. Then, transfer the donuts onto a wire rack to cool completely.
