Gather all the ingredients needed for the seafood paella. You will need 1 cup of Arborio rice, 1 pound of assorted seafood (such as shrimp, mussels, and squid), 1 onion (diced), 1 red bell pepper (sliced), 3 cloves of garlic (minced), 2 tomatoes (diced), 1 teaspoon of smoked paprika, a pinch of saffron threads, 3 cups of chicken or seafood broth, 2 tablespoons of olive oil, and fresh parsley for garnish.
Clean and prepare the seafood. Peel and devein the shrimp, remove beards from the mussels, and clean and slice the squid into rings. Rinse the seafood under cold water and pat dry with paper towels.
Heat the olive oil in a large paella pan or a wide, shallow skillet over medium heat. Add the diced onion, sliced red bell pepper, and minced garlic. Sauté until the vegetables are softened and slightly caramelized, about 5 minutes.
Add the Arborio rice to the pan and stir to coat it in the oil. Sprinkle in the smoked paprika and pinch of saffron threads. Stir everything together until the rice is well coated in the spices.
Pour in the chicken or seafood broth and add the diced tomatoes. Give it a good stir to distribute the ingredients evenly. Bring the mixture to a simmer, then reduce the heat to low. Cover the pan and let it cook undisturbed for about 15 minutes.
After 15 minutes, uncover the pan and nestle the prepared seafood into the rice mixture. Make sure the seafood is evenly distributed. Cover the pan again and continue cooking for another 5-7 minutes, or until the seafood is cooked through and the rice is tender.
Once the seafood is cooked, remove the pan from the heat. Let it rest for a few minutes. Garnish with fresh parsley. Serve the seafood paella directly from the pan, adding a squeeze of lemon juice for an extra zing. Enjoy!
