Carefully arrange the mixed seafood on top of the partially cooked rice. Push the seafood slightly into the rice to ensure it cooks evenly. Cover the paella pan or skillet with a lid or foil.
Let the paella cook for another 5-10 minutes until the seafood is cooked through and the shells of the mussels have opened. Keep an eye on the paella to prevent the rice from sticking to the bottom.
