First things first, let's assemble all the ingredients you'll need for your vegetarian paella. Here's the lineup: rice, vegetable broth, saffron threads, bell peppers, onions, garlic, tomatoes, green beans, peas, artichoke hearts, paprika, olive oil, salt, and pepper. Get them all together and let's get cookin'!
Time to chop and dice those gorgeous veggies! Slice the bell peppers into thin strips, dice the onions, mince the garlic, and chop the tomatoes. For the green beans, trim the ends and cut them into bite-sized pieces. Set them aside for now.
