Take note
Please note that this recipe is for a vegetarian version of seafood Spanish Paella, so no actual seafood is used. However, it still captures the essence of the dish and is absolutely delicious! Also, be sure to check the ingredient list for any allergens or dietary restrictions.
Start by chopping up all your vegetables. Dice the bell peppers, onions, and tomatoes. Slice the asparagus into bite-sized pieces. Peel and mince the garlic cloves. And don't forget to drain and rinse the canned artichoke hearts. Once everything is prepped, set them aside for later use.
Heat some olive oil in a large pan or paella pan over medium heat. Add the diced onions and garlic, and sauté until they become translucent and fragrant. Next, add the diced bell peppers and cook for a few more minutes until they begin to soften. Now, toss in the tomatoes and cook until they start to break down and release their juices.
Once the vegetables are cooked, it's time to add the rice. Pour the arborio rice into the pan and stir it around with the vegetables for a couple of minutes. This will help the rice absorb all the delicious flavors. Then, sprinkle in the saffron threads, paprika, and a pinch of salt. Give everything a good stir to evenly distribute the seasonings.
Now, it's time to add the veggie broth. Slowly pour it into the pan, making sure to fully submerge the rice and vegetables. Give everything one final stir to combine all the ingredients. Bring the mixture to a gentle simmer, then reduce the heat to low and cover the pan. Let it cook for about 20 minutes or until the rice is tender and has absorbed all the liquid.
After the rice has cooked, it's time to add the artichoke hearts and asparagus. Gently fold them into the rice mixture, making sure they are evenly distributed. Cover the pan again and let everything cook for an additional 5 minutes. This will allow the flavors to meld together and the vegetables to become tender.
Once the paella is ready, remove it from the heat. Take a moment to admire your culinary masterpiece! To add some freshness and a burst of color, garnish your paella with freshly chopped parsley and lemon wedges. Now it's time to serve! Scoop out generous portions of the vegetarian seafood paella onto plates and enjoy!
