Gather all the necessary ingredients for your Paella. You'll need 2 cups of Arborio rice, 1 pound of chicken thighs (boneless and skinless), 1/2 pound of chorizo sausage, 1/2 pound of shrimp (peeled and deveined), 1 onion (diced), 2 bell peppers (sliced), 4 cloves of garlic (minced), 1 can of diced tomatoes, 4 cups of chicken broth, 1 teaspoon of paprika, 1/2 teaspoon of saffron threads, olive oil, salt, and pepper.
In a large paella pan or a wide skillet, heat some olive oil over medium-high heat. Season the chicken thighs with salt and pepper, then add them to the pan along with the chorizo sausage. Sear the chicken until golden brown on both sides, and cook the chorizo until it's slightly crispy. This will take about 5-7 minutes.
Push the chicken and chorizo to one side of the pan and add the diced onion, sliced bell peppers, and minced garlic to the other side. Sauté them until they become fragrant and slightly softened, which should take about 3-4 minutes.
Move everything in the pan to one side and add the Arborio rice to the other side. Toast the rice for a minute or two until it becomes slightly translucent. Then, mix everything together until the rice is well coated with the flavors from the pan.
Stir in the can of diced tomatoes, chicken broth, paprika, and saffron threads. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let it simmer gently for about 20-25 minutes, or until the rice is cooked through and most of the liquid has been absorbed.
Place the peeled and deveined shrimp on top of the rice. Cover the pan again and cook for an additional 5 minutes, or until the shrimp turns pink and is fully cooked.
Once the shrimp is cooked, remove the pan from heat and let it rest for a few minutes. Garnish with some fresh parsley if desired. Serve this scrumptious Paella directly from the pan, and make sure to savor every bite!
