Gather your ingredients: 1 cup of rice, 1 lb of mixed seafood (shrimp, mussels, clams), 1 onion (chopped), 2 cloves of garlic (minced), 1 red bell pepper (diced), 1 tomato (chopped), 1 teaspoon of paprika, a pinch of saffron threads, 4 cups of chicken or fish broth, and a handful of fresh parsley (chopped).
In a large paella pan or skillet, heat some olive oil over medium heat. Add the chopped onion and garlic, and sauté until they turn golden and fragrant. Then, add the red bell pepper and tomato, and cook for a few more minutes until the vegetables soften.
Stir in the rice, paprika, and saffron threads. Make sure the rice is well coated with the flavorful mixture. Allow it to cook for a minute or two until the rice grains become slightly translucent.
Pour in the chicken or fish broth and give it a good stir. Bring the mixture to a boil, then reduce the heat to low. Let the rice simmer gently for about 15 minutes, or until most of the liquid has been absorbed. Be patient, good things take time!
Now it's time to add the star of the show - the seafood! Nestle the shrimp, mussels, and clams into the rice mixture. Cover the pan and let the seafood steam for about 5-7 minutes, or until the shrimp turns pink and the mussels and clams open up.
Sprinkle the chopped parsley over the paella, giving it a fresh and vibrant touch. Remove from heat and let it sit for a couple of minutes to allow the flavors to meld together. Serve your spectacular seafood paella hot, and enjoy the delicious taste of the sea!
