Gather all the ingredients you'll need: 2 cups of gluten-free paella rice, 1 pound of mixed seafood (such as shrimp, mussels, and squid), 1 onion (diced), 2 cloves of garlic (minced), 1 red bell pepper (sliced), 1 tomato (diced), 1 teaspoon of smoked paprika, 1/2 teaspoon of saffron threads, 4 cups of gluten-free chicken or vegetable broth, 1/4 cup of olive oil, salt and pepper to taste.
In a large paella pan or skillet, heat the olive oil over medium heat. Add the diced onion, minced garlic, and sliced red bell pepper. Sauté until the vegetables are tender and fragrant.
Stir in the gluten-free paella rice and smoked paprika. Toast the rice in the pan for a minute or two, until it starts to become slightly translucent.
Add the diced tomato and saffron threads to the pan. Stir well to combine the flavors.
Pour in the gluten-free chicken or vegetable broth. Bring the mixture to a simmer, then reduce the heat to low. Cover the pan with a lid and let the rice cook for about 15-20 minutes, or until it has absorbed most of the liquid.
Once the rice is almost cooked, gently stir in the mixed seafood. Cover the pan again and cook for an additional 5-7 minutes, or until the seafood is cooked through.
Remove the pan from the heat and let it sit, covered, for a few minutes. Then, fluff the paella with a fork to separate the grains. Serve hot and enjoy your gluten-free seafood paella!
