Take note
As always, exercise caution when working with hot ovens or stovetop equipment. Watch out for allergies and ensure you have all the necessary ingredients before starting.
Begin by preheating your oven to 325°F (160°C). Then, line a baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine 1 cup of creamy peanut butter, 1/4 cup of honey, 1 teaspoon of vanilla extract, and a pinch of salt. Stir until the mixture is well combined and smooth.
Peel and mash 2 ripe bananas in a separate bowl until they turn into a nice, creamy consistency. Add the mashed bananas to the peanut butter mixture and mix well.
Now it's time to add the grain-free goodness! Mix in 2 cups of almond flour, 1/2 cup of shredded coconut, and 1/4 cup of chia seeds. Stir until all the ingredients are well incorporated.
Spread the granola mixture evenly onto the prepared baking sheet. Make sure to press it down slightly so it bakes into crispy clusters. Pop it into the preheated oven and bake for about 25-30 minutes, or until the edges turn golden brown.
Once your granola is beautifully golden, remove it from the oven and let it cool completely on the baking sheet. This will allow it to crisp up even more. Once cooled, you can break it into deliciously crunchy pieces.
