Watch out for brain freeze! These ice pops are so delicious that you might inhale them a little too quickly. Also, make sure to remove any coconut cilantro leaves from your teeth after enjoying this cool treat.
In a blender, combine 1 can of coconut milk, 1/4 cup of fresh cilantro leaves, 1/4 cup of sugar, and 1 teaspoon of lime juice. Blend until the ingredients are smooth and well combined.
Carefully pour the mixture into popsicle molds. Leave a little bit of space at the top to allow for expansion as the popsicles freeze.
Insert popsicle sticks into each mold, making sure they are secure and standing upright.
Place the popsicle molds in the freezer and let them freeze for at least 4 hours, or until the ice pops are completely solid.
To unmold the ice pops, run the molds under warm water for a few seconds. Gently remove the popsicles from the molds and enjoy!
