1

In a mixing bowl, combine 1 cup of softened butter, 1 cup of granulated sugar, and 1 cup of brown sugar. Cream them together until light and fluffy. Then, add in 2 large eggs and 2 teaspoons of vanilla extract. Mix well. Finally, gradually add in 3 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Stir until the dough comes together.

2

Bake the Cookies

Preheat your oven to 350°F (175°C). Scoop about 1 tablespoon of the cookie dough and roll it into a ball. Place it on a baking sheet lined with parchment paper. Repeat this process, making sure to leave space between each cookie dough ball. Bake the cookies for 10-12 minutes until the edges turn golden brown. Once baked, let them cool completely.

3

Prepare the Guava Gelato

While the cookies are cooling, take a tub of your favorite guava gelato out of the freezer and let it soften for a few minutes. This will make it easier to spread onto the cookies later. Feel free to use as much or as little gelato as you'd like!

4

Assemble the Sandwiches

Lay out half of the cooled cookies on a flat surface. Take a scoop of the softened guava gelato and place it onto the center of each cookie. Gently press another cooled cookie on top to create a sandwich. Repeat this process until all the cookies are used.

5

Freeze and Enjoy

Once you've assembled all the sandwiches, carefully transfer them onto a baking sheet lined with parchment paper. Place the baking sheet in the freezer and let the sandwiches freeze for at least 2 hours, or until the gelato is firm. Once frozen, take them out and indulge in the glimmery goodness!
