Be careful not to burn the granola while toasting it. Also, watch out for the yogurt getting too runny if left out for too long.
In a large mixing bowl, combine almond flour, shredded coconut, chopped nuts, chia seeds, coconut oil, honey or maple syrup, and a pinch of salt. Mix everything together until well combined.
Spread the granola mixture evenly on a baking sheet lined with parchment paper. Bake in a preheated oven at 325°F (165°C) for about 15-20 minutes, or until golden brown. Stir the granola halfway through baking to ensure even toasting.
Once the granola is golden and toasted, remove it from the oven and let it cool completely on the baking sheet. This will allow it to crisp up even more.
In a serving glass or bowl, start by layering a dollop of yogurt at the bottom. Then, add a generous spoonful of the grain-free granola on top. Follow it up with a layer of your favorite fresh fruits, such as berries, sliced banana, or diced mango. Repeat the layers until you reach the top!
