Please keep in mind that this recipe involves working with hot liquids and sharp objects. Exercise caution and supervise children if they decide to join in on the fun. Also, be careful not to burn yourself when handling the hot syrup.
In a saucepan, combine 2 cups of fresh raspberries with 1 cup of granulated sugar. Cook over medium heat until the raspberries break down and release their juices, about 5 minutes. Use a fork or potato masher to gently mash the raspberries and continue cooking for another 5 minutes, stirring occasionally. Remove from heat and let the relish cool.
Carefully pour the cooled Raspberry Relish into the ring pop molds. If you don't have ring pop molds, you can use small paper cups or ice cube trays instead. Leave a little space at the top of each mold for expansion during freezing. Insert the sticks into the molds according to the manufacturer's instructions.
Place the filled molds in the freezer and let them freeze for at least 4 hours or until solid. Once the Raspberry Relish Ring pops are fully frozen, gently remove them from the molds by running warm water over the outside of each mold for a few seconds. Wiggle the sticks and carefully pull the popsicles out. Now it's time to enjoy your homemade Raspberry Relish Ring pops!
