  • Smoked paprika 2 tablespoons
  • Garlic powder 2 teaspoons

  • Ketchup 1 cup
  • Maple syrup 2 tablespoons
  • Apple cider vinegar 1 tablespoon

Prepare the rib substitute

In a large mixing bowl, combine 1 cup of vital wheat gluten, 1/4 cup of nutritional yeast, 2 tablespoons of smoked paprika, 2 teaspoons of garlic powder, 1 teaspoon of onion powder, and 1/2 teaspoon of salt. Slowly add 1 cup of vegetable broth while stirring with a fork until a dough forms.

Shape and steam the ribs

Divide the dough into 4 equal portions and shape each portion into a log shape. Wrap each log tightly in aluminum foil, twisting the ends to seal. Place the foil-wrapped logs in a steamer basket and steam over medium heat for 45 minutes.

Make the BBQ sauce

While the ribs are steaming, it's time to whip up a delectable BBQ sauce. In a medium saucepan, combine 1 cup of ketchup, 2 tablespoons of maple syrup, 1 tablespoon of apple cider vinegar, 1 tablespoon of soy sauce, 1 teaspoon of smoked paprika, and 1/2 teaspoon of garlic powder. Stir well and simmer over low heat for 10 minutes.

Grill the ribs

Preheat your grill to medium-high heat. Carefully unwrap the steamed rib logs from the foil. Brush the ribs generously with the BBQ sauce on both sides. Place the ribs on the grill and cook for 3-4 minutes per side, or until nice grill marks form.

Serve and enjoy

Once the ribs are beautifully grilled, remove them from the heat and let them cool for a couple of minutes. Cut the rib logs into individual rib portions and serve with extra BBQ sauce on the side. Watch as your friends dig in and rave about your vegan grilling skills!
