Choose your favorite citrus fruits, such as oranges or lemons. Wash them well and use a sharp knife to carefully remove the peels. Try to remove as much of the pith (the white part) as possible, as it can be bitter. Cut the peels into thin strips or smaller pieces, depending on your preference.
Place the citrus peels in a saucepan and cover them with water. Bring the water to a boil and let the peels simmer for about 5 minutes. This blanching process helps soften the peels and remove any bitterness. Drain the peels and rinse them with cold water.
In a separate saucepan, combine equal parts water and sugar. For example, if you have 1 cup of citrus peels, use 1 cup of water and 1 cup of sugar. Heat the mixture over medium heat, stirring occasionally until the sugar is completely dissolved.
Add the blanched citrus peels to the syrup and let them simmer for about 45 minutes to an hour. Stir occasionally to prevent sticking. The peels will become translucent and absorb the sweet syrup.
Using a slotted spoon or tongs, remove the candied peels from the syrup and place them on a wire rack or parchment paper to cool and dry. Let them sit for at least 12 hours or overnight. Once dry, roll the peels in granulated sugar to coat them evenly.
