Preheat the oven

Preheat your oven to 375°F (190°C). This soufflé is going to rise like a champ!

Prepare the cheese mixture

In a saucepan, melt 3 tablespoons of butter over medium heat. Add 3 tablespoons of all-purpose flour and stir until smooth. Gradually whisk in 1 cup of milk and cook until thickened. Remove from heat and stir in 1 cup of grated cheese (like Gruyère or cheddar). Let the mixture cool slightly.

Whip the egg whites

In a separate bowl, beat 4 egg whites until stiff peaks form. This will give our soufflé a spectacular rise!

Combine the cheese mixture and egg whites

Gently fold the cheese mixture into the beaten egg whites. Be careful not to overmix, as we want to keep the airiness intact.

Grease and coat the ramekins

Butter the inside of 4 ramekins and coat them with grated cheese. This will help the soufflé rise evenly and give it a nice crust.

Fill the ramekins and create a collar

Fill the ramekins with the soufflé mixture, leaving about 1/4 inch of space from the top. Create a collar around each ramekin by tying a strip of parchment paper around the rim. This will help the soufflé rise straight up.

Bake to golden perfection

Place the ramekins on a baking sheet and bake in the preheated oven for 18-20 minutes, or until the soufflés are puffed and golden brown. Avoid opening the oven door while they're baking, or your soufflés might deflate!

Remove the soufflés from the oven and carefully remove the parchment paper collars. Serve immediately and enjoy the magic of a perfectly baked classic cheese soufflé!
