In a large mixing bowl, combine 2 cups of all-purpose flour, 2 tablespoons of granulated sugar, and a pinch of salt. Cut ½ cup of cold unsalted butter into small cubes and add it to the bowl. Use your fingertips to rub the butter into the flour mixture until it resembles coarse crumbs. Gradually add ½ cup of ice-cold water and mix until the dough comes together.
Place the dough on a lightly floured surface and knead it a few times to bring it together. Roll it out into a rectangle shape, about ¼ inch thick. Make sure the surface is well-floured to prevent sticking.
Peel and core 2 medium-sized apples, then cut them into thin slices. In a small bowl, mix together ¼ cup of granulated sugar, 1 teaspoon of ground cinnamon, and ½ cup of chopped almonds. Spread this mixture evenly over the rolled-out dough, leaving about an inch border around the edges.
Starting from one of the longer edges, carefully roll the dough into a tight log. Seal the edges by pinching them together. Gently transfer the log onto a baking sheet lined with parchment paper.
Preheat your oven to 375°F (190°C). Brush the pastry with some beaten egg for a beautiful golden color. Bake for about 25-30 minutes until the pastry is golden brown and the apples are tender.
