Gather your ingredients and start by chopping 1 onion, 2 carrots, 2 celery stalks, and 2 cloves of garlic. Keep them aside for now.
In a large soup pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, carrots, and celery to the pot. Cook them for about 5 minutes until they become tender and fragrant. Stir in the minced garlic and cook for another minute.
Pour in a can of crushed tomatoes (about 400g) and stir it into the pot. Let it simmer for a couple of minutes to bring all the flavors together.
Now, it's time to add some seasoning! Sprinkle 1 teaspoon of dried basil, 1 teaspoon of dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper into the pot. Give it a good stir to combine. Then, pour in 4 cups of vegetable broth and bring the soup to a boil. Once boiling, reduce the heat to low and let it simmer for about 15 minutes.
It's veggie time! Add in 1 cup of diced zucchini, 1 cup of diced potatoes, 1 cup of chopped green beans, and 1 cup of diced tomatoes. Stir everything well and let the soup simmer for an additional 10-15 minutes or until the veggies are tender.
Once your veggies are cooked to perfection, it's time for the final touches. Stir in 1 cup of cooked pasta (any small shape you like) and 2 cups of fresh spinach leaves. Let the soup simmer for a few more minutes until the pasta is heated through and the spinach wilts. Taste and adjust the seasonings if needed.
Your minestrone soup is now ready to be devoured! Serve it hot in bowls, and if you'd like, sprinkle some grated Parmesan cheese on top. You can also accompany it with a crusty bread or some garlic breadsticks. Enjoy the delicious warmth and flavors!
