Turn your oven on to 350°F (175°C) to preheat it. This will give you that perfect crispy crust!
In a small saucepan, melt 2 tablespoons of butter over medium heat. Add 2 tablespoons of all-purpose flour and stir until smooth. Slowly whisk in 1 cup of milk and continue stirring until the sauce thickens. Remove from heat and mix in 1 cup of shredded cheese until it's all melty and gooey!
Grab some bread slices and spread a thin layer of mustard on one side of each slice. Place a slice of ham and a slice of cheese on the mustard side of one slice. Top it off with another bread slice, mustard side down, creating a sandwich.
Dip each sandwich in the cheese sauce, making sure it's all covered in that cheesy goodness. Let the excess sauce drip off, then transfer the sandwiches to a baking sheet lined with parchment paper.
Pop the baking sheet in the preheated oven and bake for about 15 minutes or until the sandwiches are golden and crispy. Once they're done, let them cool for a few minutes, then serve and enjoy your ooey-gooey Croque Monsieur sandwiches!
