In a bowl, whisk together the lemon zest, lemon juice, powdered sugar, ginger powder, and cream until the mixture is smooth and well combined.
In a saucepan, combine water, butter, sugar, and salt. Bring the mixture to a boil, then reduce the heat to low. Add flour and stir vigorously until the dough forms a ball and pulls away from the sides of the pan.
Transfer the dough to a piping bag, fitted with a large round tip. Pipe the dough onto a baking sheet lined with parchment paper, forming long, thin cylinders. Bake in a preheated oven at 400°F (200°C) for about 25-30 minutes, or until golden brown.
Once the eclair shells have cooled, make a small incision on one side of each eclair. Fill a piping bag with the lemon ginger filling and pipe it into the hollow center of each eclair.
In a small saucepan, heat the water, powdered sugar, and lemon juice over low heat until the sugar has dissolved. Remove from heat and let the glaze cool slightly. Dip the top of each filled eclair into the glaze, allowing the excess to drip off.
Place the glazed eclairs in the refrigerator for about 30 minutes to set the glaze. Once chilled, serve your delicious Lemon Ginger Eclairs and enjoy!
