Cut the cooled eclairs in half horizontally. Spoon or pipe the whipped cream mixture from step 1 into the bottom half of each eclair. Fill them up generously, because more cream means more happiness!
Now it's time to get creative! Arrange the filled eclairs vertically in a tower formation. You can stack them in any pattern you like, just make sure they're balanced and sturdy. Your creativity knows no bounds!
