In a large mixing bowl, combine 1 cup of almond flour with 1.5 cups of powdered sugar. Sift the mixture twice to ensure a smooth texture. In a separate bowl, beat 2 egg whites until soft peaks form. Gradually add 1/4 cup of granulated sugar to the egg whites while continuing to beat. Gently fold the almond flour mixture into the whipped egg whites until fully incorporated.
Transfer the macaroon batter into a piping bag fitted with a round tip. Pipe small, even rounds of batter onto a baking sheet lined with parchment paper. Tap the baking sheet on a flat surface to release any air bubbles. Let the macaroons rest for about 30 minutes to form a dry skin on the surface. Preheat your oven to 300°F (150°C). Bake the macaroons for 12-15 minutes until they are set and firm. Allow them to cool completely before removing them from the baking sheet.
In a mixing bowl, beat together 1/2 cup of unsalted butter and 1 cup of powdered sugar until creamy. Add 1/2 teaspoon of peppermint extract and a few drops of green food coloring for a minty hue. Beat until well combined and smooth.
Pair up the cooled macaroon shells of similar sizes. Spread a generous dollop of mint filling on the flat side of one shell and sandwich it with another shell. Repeat with the remaining shells. For a stunning finishing touch, sprinkle some edible gold dust on top of the macaroons.
