In a large mixing bowl, combine 2 cups of all-purpose flour, 1 teaspoon of salt, and 1 tablespoon of sugar. Cut 1 cup of cold unsalted butter into small cubes and add it to the bowl. Use your fingers to rub the butter into the flour mixture until it resembles coarse breadcrumbs. Add 1/4 cup of ice water, a little at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Heat a tablespoon of olive oil in a skillet over medium heat. Add 1 finely chopped onion and sauté until golden brown. Stir in 2 cloves of minced garlic, 1/2 cup of chopped cooked bacon, 1 cup of shredded cheddar cheese, and salt and pepper to taste. Cook for another minute until the cheese has melted. Remove the filling from heat and let it cool.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Roll out the chilled dough on a lightly floured surface to about 1/8-inch thickness. Cut the dough into rectangular shapes of your desired size. Spoon a generous amount of the filling onto half of the rectangles, leaving a border around the edges. Place another rectangle of dough on top of each filled one and press the edges together with a fork to seal. Transfer the pop tarts to the prepared baking sheet and brush the tops with beaten egg. Bake for 18-20 minutes or until golden brown.
