Take one of the chilled dough disks out of the refrigerator and roll it out on a lightly floured surface to about 1/8 inch thickness. Using a round cookie cutter, cut out circles of dough. Place half of the circles onto the prepared baking sheet.
Spoon a tablespoon of the fruit filling onto each dough circle on the baking sheet. Be careful not to overfill. Gently place another dough circle on top of the filling and press the edges together to seal. Use a fork to crimp the edges and create a decorative pattern.
Bake the pop tarts in the preheated oven for 15-18 minutes, or until golden brown. Remove from the oven and allow them to cool on a wire rack.
