In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of sugar, and a pinch of salt. Cut in 1 cup of cold unsalted butter using a pastry cutter or your hands until the mixture resembles coarse crumbs. Add 1/4 cup of ice water, one tablespoon at a time, until the dough comes together. Divide the dough in half, shape into discs, and wrap each in plastic wrap. Refrigerate for at least 1 hour.
Choose your favorite flavor combination! For a classic gourmet pop tart, try filling options like strawberry jam and cream cheese, or nutella and banana slices. Roll out one of the chilled dough discs on a lightly floured surface until it's about 1/8 inch thick. Use a ruler and a sharp knife to cut out rectangles that are approximately 3x4 inches in size.
Place a tablespoon of your chosen filling onto the center of half of the pastry rectangles. Brush the edges with beaten egg, then place another rectangle of pastry on top of each filled one. Press the edges together with a fork to seal. Transfer the assembled pop tarts onto a baking sheet lined with parchment paper. Bake in a preheated oven at 375°F (190°C) for about 25 minutes, or until golden brown.
While the pop tarts are cooling, mix together 1 cup of powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract. Drizzle the glaze over the top of each pop tart once they have cooled slightly. Feel free to get creative and add sprinkles or chopped nuts on top!
