Be careful when separating the egg whites from the yolks as any traces of yolk can prevent the whites from whipping properly. And be gentle when folding the yolks back into the egg whites to maintain their light and airy texture.
Preheat your oven to 350°F (175°C). We'll be baking the cloud eggs to perfection!
Carefully separate the egg whites from the yolks, ensuring there are no traces of yolk in the whites. Place the whites in a clean mixing bowl and set the yolks aside in a separate bowl.
Using an electric mixer or a whisk, beat the egg whites until stiff peaks form. This may take a few minutes, so keep going until they're fluffy and hold their shape.
Gently fold in your desired seasonings into the whipped egg whites. You can add salt, pepper, grated cheese, or any herbs and spices you like to enhance the flavor. Just be careful not to deflate the whites!
Scoop dollops of the seasoned egg whites onto a baking sheet lined with parchment paper. Use the back of a spoon to make a well in the center of each dollop. This is where the yolks will nestle.
Gently place a yolk into each well you created in the egg whites. Be sure not to break the yolks, as we want them to keep their runny goodness!
Carefully place the baking sheet in the preheated oven and bake the cloud eggs for about 8-10 minutes, or until the edges of the egg whites turn golden brown. The yolks should still be runny.
Remove the cloud eggs from the oven and let them cool for a minute or two. Then gently transfer them to a plate using a spatula. Sprinkle some additional seasoning or herbs on top, if desired. Serve immediately and enjoy the fluffy deliciousness!
